Oat and banana pancakes

Good morning everyone!!

Today I'm here with a brand new recipe. This morning I was feeling like trying something different from the boring toasts or cookies so I decided i would give it a go to this gorgeous-looking "fit" pancakes.

Oat and banana pancakes.
They turned out absolutely delicious and they are quite easy to make so let's get started!

Here you have the recipe that I used.

Ingredients (10 pancakes aprox.):

  • 3-4 full spoons of oat flakes
  • 2 eggs
  • 2 egg whites
  • 1 ripe banana
  • 1 pinch of baking powder
  • 6 drops of vanilla extract
It's easy. The only thing you need to do is blend all the ingredients together with a mixer or blender until you get a liquid and homogeneous mix.

If you are one of those who appreciate a few more minutes of sleep in the morning, don't worry! You can prepare the mix the night before and keep it in the fridge until the next morning.

Once we have our mixture ready, next step is heating up a frying pan with just a little bit of olive oil so that the pancakes do not stick to the surface of the pan.

When the frying pan is warm enough it's time to pour our mixture. Just a small amount will do and remember to pour it in the centre and to let it spread in order to give it the perfect, rounded shape.

As you can see in the photograph, bubbles will start to pop up in the surface of our pancake to let us know that they are ready to be flipped over.


We can make use of a flat spatula or throw them up in the air if we are brave enough to do so. 

And that's it, as simple as that, you've cooked your first pancake. 

So far, you should have obtained something similar to this:


Do the same with the rest of the mixture and you will have an amazing breakfast that will keep you full for the whole morning thanks to the oat flakes mainly.

You can accompany them with a little bit of jam, honey, syrup....or Nutella, as I chose to do. It goes perfectly with the banana flavor and, you know, chocolate is always good.
